Braised Awa-Odori Chicken Breast with Tomato and Dried Shiitake Mushroom

This dish is cooked without using water to bring out the natural flavors of the ingredients with chicken and vegetables.

Awa-Odori Chicken breast 2 pieces
tomatoes 2
onion 1
dried shiitake mushrooms 8
salt 1% of meat weight
white pepar and parsley proper amount
Recipe / How to make
Step1 Cut the tomatoes and onion into round slices.
Step2 Cut the chicken tender in half, and season both side with salt and white pepper.
Step3 Put the fillets skin side down on the thick pot, and put the reconstituted shiitake mushrooms, onion and tomato on the top.

To roast the chicken skin down side will remove surplus fat, and make surface area for crispy.

Step4 Cover the pot and heat on medium. Turn to low heat when you hear the sound chicken frizzling and the skin is browned.

Step5 Simmer on low heat for about10 minutes. Turn off the heat and leave until the chicken is well cooked.

You will be able to cut the chicken smoothly and without becoming hard when you cook in remaining heat.

Step6 Finish with salt and white pepper to taste, sprinkle with parsley on top.
