Braised Awa-Odori Chicken Breast with Tomato and Dried Shiitake Mushroom

Step1 |
Cut the tomatoes and onion into round slices. |
Step2 |
Cut the chicken tender in half, and season both side with salt and white pepper. |
Step3 |
Put the fillets skin side down on the thick pot, and put the reconstituted shiitake mushrooms, onion and tomato on the top.

Cover the pot and heat on medium. Turn to low heat when you hear the sound chicken frizzling and the skin is browned.

Simmer on low heat for about10 minutes. Turn off the heat and leave until the chicken is well cooked.

Step6 | Finish with salt and white pepper to taste, sprinkle with parsley on top. |
