Crispy Fried Awa-Odori Chicken Thigh

This dish really brings out the full of taste of the Awa-Odori Chicken.
Use a “weight”is a knack of cooking to make a crispy chicken skins.

Material 4people
Awa-odori chicken thighs 2 pieces
salt 1% of meat weight
white pepper proper amount
Mashed Potatoes (Potato:Milk=1:1)
Recipe / How to make
Step1 Pare the fat and tendon from the chicken thigh.

Chicken thigh have a few tendons same as chicken tender.
It becomes very soft and delicious if you removed.

Step2 Season the both side of chicken with salt and white pepper.

Do not any cut into the chicken to seal in the delicious juices.

Step3 Heat non oil in a frying pan on medium heat. Place the fillets skin side down on the pan, put a weight such as flat plate and cook for 3 – 4 minutes until the skin is browned.

This “weight” helps to chicken is going to crispy and to remove residue fat.

Step4 Take the plate from a pan, turn over and cook until the skin is browned on low heat.
Step5 Remove excess oil on the pan with paper towle.

There is accumulated saturated fatty acids to become bad cholesterol between chicken meat and skin.
Don't be lazy about remove fat. That is going to out from the chicken with oil while you cook.

Step6 Turn off the heat and leave for another 5 minutes until the chicken is cooked.

You will be able to cut the chicken smoothly and without becoming hard if you cook in remaining heat.
