Fresh and tender chicken breast with ume sauce(Suisho chicken with refreshing ume sauce)

Material 2people
Awaodori chicken breast 200g
salt small amount
potato starch adequate amount
japanese leek 10cm
green shiso (perilla) 10 leaves
<Sauce>
pickled plum 1 or 2
★ponzu (soy sauce and citrus juice) 2 tbsp
★sesame oil 2 tbsp
Recipe / How to make
Step1 Slice chicken breast into 6~7mm slices.
Step2 Lightly salt Step1 and coat it with potato starch.
Step3 Boil chicken, one by one in boiling water for about 1 minutes (or until chicken is cooked).
Cool the chicken in ice-water.
Step4 Pit the plum pickle and chop it coarsely. Mix with ★
Step5 Cut Japanese leek and green shiso into fine strips and soak it in water and drain.
Step6 Wipe off moisture and garnish Step3 with Step4 and Step5.
