japanese leek | 10cm |

★ponzu (soy sauce and citrus juice) | 2 tbsp |

Recipe / How to make | |

Step1 | Slice chicken breast into 6~7mm slices. |
Step2 | Lightly salt Step1 and coat it with potato starch. |
Step3 |
Boil chicken, one by one in boiling water for about 1 minutes (or until chicken is cooked). Cool the chicken in ice-water. |
Step4 | Pit the plum pickle and chop it coarsely. Mix with ★ |
Step5 | Cut Japanese leek and green shiso into fine strips and soak it in water and drain. |
Step6 | Wipe off moisture and garnish Step3 with Step4 and Step5. |
