Simmered Awa-Odori Chicken and Vegetables (Chikuzen Ni)
Chikuzen Ni is a one of classic Japanese stewed dish. Our recipe used “locally produced poultry Awa-odori chicken thigh” and the strong savory flavor to make a rich taste of special dish.

Bamboo-shoot boiled plain | 100g |
carrot – peeled | 1/2 |
burdock - peeled | 1/2 |
renkon (lotus root) - peeled | 100g |
shiitake mushrooms - rehydrated | 3 |
block konnyaku yam cake | 1/2 |
snow peas | 20g |
●vegetable oil | 1/2 Tbsp |
●sugar | 2 Tbsp |
●dark soy sauce | 2 Tbsp |
dashi stock | 2-3 cups(400-600ml) |

Recipe / How to make | |

Step1 | Cut the chicken thigh into bite-size pieces. |
Step2 |
Roughly chop the bamboo shoot, carrot, burdock, renkon and shiitake mushrooms into bite-size pieces. (soak burdock and and renkon in water) Cut the konnyaku into thick bite-size pieces by spoon and par boil it and then drain. Pull out strings from the snow peas, par boil them with salt and cut in half with a diagonal line. |
Step3 |
Put the vegetable oil into the pan on medium heat. Place the chicken on the pan and cook until it turns slightly white. Take the chicken out into a bowl once, and mix with sugar and soy sauce of ●. |
Step4 | Drain Step2 of burdock and renkon. |
Step5 | Put the vegetable oil in frying pan and heat. Add the vegetables (except peas) into the pan and cook together until all are coated with oil. |
Step6 | Add dashi stock into the pan, put small lid and large lid of pan, simmer on medium heat in 4 to 5 minutes. |
Step7 |
Add 4 tbsp of sugar into the pan and simmer them in 7 to 8 minutes more. |
Step8 | Add the chicken thigh of Step 3 and 2 tbsp of soy sauce, simmer them until it becomes condensed. |
Step9 |
Add the snow peas into Step 8. |
