Simmered Awa-Odori Chicken with Tomato

Awa-odori chicken thigh 400g
minced garlic 1 clove
olive oil 20cc
minced onion 100g
white wine 40cc
canned whole tomato (crush lightly) 400g
dried basil 1 Tsp
eggplants (Fried) 2
sugar 1 Tsp
salt 2 Tsp
pinch of powder white pepper
chervil etc.
Recipe / How to make
Step1 Cut the chicken thigh into bite-size pieces.
Step2 Mince the garlic and onion, squeeze canned whole tomamo lightly.
Cut the eggplant into bite-size pieces, and su-age deep-fry (what is deep-fry without coat) them.
Step3 Put olive oil and garlic in a pan and heat them on low heat until garlic aroma comes out. Add onion, then, chicken and stir them.
Step4 Add the white wine and put a lid, roast them in about 2 to 3 minutes.
Step5 Remove the chicken from th pan once, put the whole tomao in the pan and heat until boiled lightly, add the seasoning and taste them.
Step6 Put the chicken back in the pan when tomato sause is still little right state, and simmer them.
Step7 Put the dried basil and deep-fried eggplant in the pan, and simmer them once more when the tomato sauce became just right.
To dish on a deep plate.
